Healthy and yummy recipe: Key Lime Pie

I must warn you it’s addictive, AND healthy enough to eat 3 times a day! It’s fast and easy to make and only has a few ingredients – all healthy.

Crust
• 1 cup quick-cooking oats (or to make it gluten-free use buckwheat)
• 1/2 cup coconut oil
• 1/4 cup golden flax seeds
• 1 Tbsp. raw honey
• 1/2 tsp. Celtic Sea salt

Filling
• 4 large avocados
• 1 cup fresh lime juice
• 1 cup coconut oil
• 1 cup raw honey

Grind oats, flax seeds and salt into a flour in a food processor. Process with remaining crust ingredients and press into a spring form pan (a spatula is helpful to get it evenly distributed). Refrigerate.

In a high speed blender thoroughly blend all filling ingredients. Pour into crust, refrigerate, and set 12-24 hours. It should be as firm as a cooked cheesecake, so be patient!
